Raw or cooked? 1 There have always been food trends. One of them is the raw food diet, in which you don’t cook your vegetables. The idea is that cooking vegetables kills the nutrients, the vitamins and the minerals that are in them. But is that really true? 2 First of all: yes, it’s true that raw vegetables contain more nutrients than cooked vegetables. But that’s not the whole story – because eating more nutrients doesn’t necessarily mean you also absorb more nutrients. When you cook vegetables, you break down the cell walls and release the nutrients, which makes it easier for your body to absorb them. Also, cooking your vegetables makes them easier to chew. 3 However, if you cook vegetables for too long and in too much water, you will lose a lot of the vitamins and minerals. Blanching or steaming them, or using them in a stir-fry, helps preserve them. 4 But the best way to prepare vegetables is the way you like them. Taste and texture are very important. After all, if you don’t like them, you won’t eat them. So cook them, roast them, microwave them or eat them raw – but eat them! |
